Ingredients

1 1/2 - 2 pounds heirloom or roma tomatoes

1 cup brown sugar

2 tablespoons apple cider vinegar

1 teaspoon salt

1/2 teaspoon ground cinnamon

2 tablesppons fresh grated ginger

1/4 teaspoon cumin

1 teaspoon red pepper flakes

Preparation

  1. Combine all ingredients in a heavy bottom sauce pan and bring to a boil over medium.

  2. Reduce heat and simmer for 1 hour until thickened and has jam consistency.

  3. Transfer jam to a sanitized jar and allow to cool to room temperature then cover and store in the refrigerator. Enjoy!
