Bakery Style Coffee Cake Muffins

Bakery-style coffee cake muffins made right in your own kitchen with this foolproof recipe. Perfect for breakfast, or an afternoon pick-me-up!

Ingredients

For the Cinnamon Crumb Topping

1/2 cup all-purpose flour

1/4 cup granulated sugar

1/2 teaspoon ground cinnamon

1/4 teaspoon ground nutmeg

1/8 teaspoon salt

1/4 cup unsalted butter


For the Cinnamon Sugar Swirl

1/4 cup granulated sugar

2 teaspoons cinnamon


For the Muffins

3 cups all-purpose flour

1/2 cup unsalted butter, softened at room temperature

3 teaspoons baking powder 

1/2 teaspoon ground cinnamon

1/2 teaspoon salt

3/4 cup sugar

1/4 cup light brown sugar, packed

3 large eggs

2 teaspoons vanilla extract

1/2 cup buttermilk

1/2 cup greek or full-fat yogart


For the Icing Glaze

1 cup confectioners sugar, sifted

2 tablespoons water

1 teaspoon vanilla extract

1/8 teaspoon salt






Preparation

For the Cinnamon Crumb Topping

  1. In a mixing bowl combine flour, sugar, cinnamon, nutmeg, and salt. Stir in melted butter, mixing until combine. Set aside.

For the Cinnamon Sugar Swirl

  1. In a mixing bowl combine sugar and cinnamon. Set aside.

For the Muffins 

  1. Preheat oven to 400º F. Line muffin tin with paper liners and set aside.

  2. In a large mixing bowl, combine flour , baking powder. cinnamon, and salt. Set aside.

  3. In a bowl of a stand mixer with the paddle attachment, mix butter at low speed break it up, about 30 seconds. Mix in both sugars until light and fluffy; about 3 minutes. 

  4. Add in eggs one at a time, mixing well in between each addition. Scape down the sides of the bowl.

  5. In a small bowl, whisk together vanilla, yogurt, and buttermilk. With the mixer running on a low speen, gradually alternate adding the dry and wet ingredients to the mixer bowl, starting and ending with the dry ingredients. Mix until just combined, being sure not to over mix.

  6. Fill prepared muffin cups about 1/4 of of the way full. Evenly divide the cinnamon sugar swirl amongs the muffins and cover with the remaining batter. Lightly tap muffin tin against counter top to settle the batter or smooth with a lightly greased spoon.

  7. Crumble the cinnamon crumble topping, and evenly drsibute over the muffins. Gently push the toppping into the batter to adhere.

  8. Bake ovens for 7 minutes, then withouth opening oven, reduce the temperature to 350º F and bake for 15 additional minutes. Muffins are done when the tops are lightly browned and a toopthpick inserted in the middle comes out clean. 

  9. While the muffins are baking, assemble the glaze topping. In a small mixing bowl whisk together powdered sugar, water, vanilla, and salt. Add more water to if too thick, or more sugar if too thin.

  10. Allow muffins to cool for 10 minutes in the pan before moving to a wire rack. Drizzle with prepared glaze and serve warm. Enjoy!

Oh, the humble muffin. A breakfast staple, a mid-morning pick-me-up, or a sneaky afternoon indulgence. For me, muffins were a cornerstone of my office life. Back when I was chained to a desk, I loved sneaking out to the bakery down the road for an iced coffee and muffin. Let’s be real, sometimes you need a little something extra to get you through that 3 p.m. slump. And for me, that something extra was a coffee cake muffin. The kind with that perfect crumbly topping, a hint of cinnamon and nutmeg, and a moist, tender interior. So, I had to recreate that bakery magic home.


Tips for Perfect Muffins

To ensure your muffins turn out as fluffy and delicious as possible, keep these tips in mind:

  • Don't Overmix: Overmixing is the enemy of a tender muffin. Mix just until the dry ingredients are incorporated. A few lumps are okay!

  • Lower the Oven Temperature: Turning down the oven midway through the baking process (around 350°F from 400°F) helps create a moist interior.

  • Let Them Cool: Allow the muffins to cool in the pan for a few minutes before transferring to a wire rack. This prevents them from falling apart.


The Magic of the Crumble

The crumble topping is what elevates these muffins from ordinary to extraordinary. It's a simple mixture of brown sugar, flour, cinnamon, nutmeg, and butter. While I love the classic combination of cinnamon and nutmeg, feel free to experiment with different flavors. Cardamom, ginger, or allspice can add a unique twist. You can also add chopped nuts, dried fruit, or even chocolate chips to the batter or crumble for extra indulgence.
